Spotlight of the Week
Jenny Thacker

Jenny Thacker is this week’s spotlight. She is kind, funny, and REAL. She says it like it is. She does not beat around the bush. You should really get to know her. Her birthday is March 9, 1974. She was born and grew up in Grantsville, Utah. She attended Grantsville High School. After high school graduation, she went to BYU! In September of her senior year, she met a guy named Ryan. One of Jenny’s roommates was Ryan’s mission president’s daughter. This roommate had a photo album and when Jenny saw a picture of Ryan, she wanted to meet him. So, her roomie set them up on their first date to a BYU football game. During this date, Jenny noticed her “old” boyfriend was also at the game and just three rows up from her and Ryan. So, during half time and all of the 3rd quarter, Jenny decided to hang out with her “old” boyfriend. Ryan was, of course, not happy about this; but Jenny won him over during the 4th quarter of the game. Just a few months later, they married in February of 1996. They have 4 boys. One of the greatest things about being a mother is when her kids are asleep (just kidding, lol). She loves to see their faces when they are happy. Her favorite food is Mexican, but she LOVES “Ruby River”. Her favorite dish to order is “Smothered Chicken”. She enjoys reading. Jenny has participated in 3 pageants and volunteers at the “Miss Utah Pageant” each year. I hope you enjoyed getting to know another Sister in our ward. (By Cindy Delano)

Recipe of the Week
White Chicken Chili
(Jill Hodgson)

4 Cans of Chicken Broth
1 lb. Great Northern Beans
1 Clove Minced Garlic
1 Chopped Onion
1 Can Green Chilies
1 tsp. Cumin
1 tsp. Oregano
4 Cups shredded chicken
Jack Cheese

Mix broth, beans, garlic, and onion; simmer for 1 hour. Add chilies, cumin, oregano, and chicken. Simmer for another hour. Serve with Jack Cheese. (It can also be made in a crock pot.)

Alternate: use 2 cups dried white beans. Rinse and soak overnight. In the morning, drain, rinse, and soak again all day. Rinse. Continue as above.

***The Stake Relief Society would like to invite all sisters and graduating Laurels to a special birthday celebration of “Women at the Well”. It will be held at the Highland South Stake Center on March 19, 2009. There will be a light buffet dinner in the Cultural Hall from 6:00-6:45 p.m. The program will be held in the chapel at 7:00 p.m. (Sunday Dress). Please come and celebrate with us.
We encourage you to read the “Woman at the Well” story in John 4:8.
