Freezer Meals


Recipes from the Freezer Meal Enrichment Activity:

Chicken Enchiladas
1. Combine the following:
1 large can cream of chicken soup
1 can green chilis
8 oz. sour cream
1/2 cup water
2 cups Jack cheese
3 cups shredded cooked chicken

2. Crumble handfuls of tortilla chips into above mixture. Add enough chips to reach desired
consistency (not too soft, not too dry).
3. Spray foil pan with cooking spray.
4. Spread mixture into pan(s).
5. Sprinkle 1 more cup of Jack cheese over the top.
6. Cover with heavy duty aluminum foil.
7. Label with instructions:

Instructions: Thaw. Bake covered 45-60 minutes at 375 degrees.

Lasagna
1. Mix
1 can spaghetti sauce
2 cups ground beef
1 cup water
2. Mix in separate bowl:
2 cups cottage cheese
1/4 cup Parmesan cheese
1 egg
1/2 tablespoon Italian seasoning

3. You will also need:
2 cups mozzarella cheese

4. Layer in pan(s) 2-3 times:
1. sauce (reserve 1/2 cup for top)
2. uncooked noodles (about 6-9 total)
3. cheese mixture
4. mozzarella cheese

5. Finish with last bit of sauce mixture. Sprinkle with 1/4 cup more Parmesan and1/2 cup more mozzarella.
6. Cover with plastic wrap; then cover with aluminum foil.
7. Label with instructions:

Thaw. *Remove plastic wrap.* Bake covered for 1 hour at 350 degrees.
